Clean eats: simple coconut oil asparagus

  • In the midst of the polar vortex, Fiance and I made the trek to the grocery store. It was a bad idea and we only had five minutes to put together a meal. We grabbed seven ingredients including pineapple, avocados, limes, cilantro, asparagus and beef tenderloin medallions.

    Clean eats

    The star of the show was really the simple asparagus on the side.

    • 1 bunch of asparagus cleaned and trimmed
    • 1 TBS of coconut oil softened in the mocrowave
    • A dusting of sea salt on top
    • Broil for 4 minutes on each side (or until to your crispiness preference)
