Four Guacamole Recipes to Wow Your Crowd

If you’re looking for an excuse to make some guac (not that you ever need one) National Guacamole Day is September 16, so look no further. There’s really no way to go wrong with freshly made guac, but that’s not to say you can’t have fun and elevate it. Throw in some twists that will really wow any guests as you tailgate, start off a dinner party, or eat chips, veggies, and guac as your dinner – we’re not here to judge.

Whether you want to go classic, spice things up, try a tropical spin, or throw in some nutritional punches with Greek yogurt and kale, these recipes have you covered. Or you can do what I did while developing them and make all four so that guests can enjoy a choose your own adventure guac experience.

Classic Guacamole

Ingredients:

  • 4 avocados, skins and pits removed
  • ½ tomato, diced
  • 1 cup diced red onion (roughly ½ an onion)
  • ½ cup cilantro, roughly chopped
  • 1 jalapeño, seeds and pith removed, diced
  • 1 tsp. dried cumin
  • Juice and zest of ½ lime
  • 1 tsp. Tabasco, optional
  • Salt to taste

Directions:

  1. In a large mixing bowl, roughly mash avocado with a knife, fork, or potato masher.
  2. Add tomato, red onion, cilantro, jalapeño, cumin, lime juice and zest, Tabasco, and salt and stir to combine.

Elote Guacamole

Ingredients:

  • 4 avocados, skins and pits removed
  • 1 cup diced red onion (roughly ½ an onion)
  • ½ cup cilantro, roughly chopped
  • 1 jalapeño, seeds and pith removed, diced
  • 1 tsp. dried cumin
  • Juice and zest of ½ lime
  • 3 husks corn, cooked and removed from cob
  • ¼ cup cotija cheese, finely grated
  • 1 tsp. chile powder
  • 2 tsp. Tajin, optional
  • 1 tsp. Tabasco, optional
  • Salt to taste

Directions:

  1. In a large mixing bowl, roughly mash avocado with a knife, fork, or potato masher.
  2. Add red onion, cilantro, jalapeño, cumin, lime juice and zest, corn, cheese, chile powder, Tajin, Tabasco, and salt and stir to combine.
  3. Garnish with any remaining corn, cotija cheese, and Tajin or chile powder.

Summer Fruit Guacamole

Ingredients:

  • 4 avocados, skins and pits removed
  • ½ tomato, diced
  • 1 cup diced red onion (roughly ½ an onion)
  • ½ cup mango, diced
  • ½ cup pineapple, diced
  • 1 jalapeño, seeds and pith removed, diced
  • Juice and zest of ½ lime
  • ½ cup cilantro, roughly chopped

Directions:

  1. In a large mixing bowl, roughly mash avocado with a knife, fork, or potato masher.
  2. Add tomato, red onion, mango, pineapple, jalapeño, lime juice and zest, and salt and stir to combine.

Kale Greek Yogurt Guacamole

Ingredients:

  • 4 avocados, skins and pits removed
  • ¼ cup Greek yogurt
  • 2 cups kale, finely chopped
  • 1 cup diced red onion (roughly ½ an onion)
  • 1 jalapeño, seeds and pith removed, diced
  • Juice and zest of ½ lime
  • Salt to taste

Directions:

  1. In a large mixing bowl, combine avocados and Greek yogurt and mash with a potato masher until smooth.
  2. Add kale, red onion, jalapeño, lime juice and zest, and salt and stir to combine.
