We’ve been eating a lot of sweet potatoes at aSweatLife HQ. We’ve had sweet potato kugel just staring at us from the time I pulled that steaming hot pan out of the oven and we’ve been enjoying steamed sweet potatoes in our lunches.
With the sweet potato takeover happening, I thought, “Why not put that Vitamin A- and C-rich food in a smoothie.”
Smoothies are a staple in our house, we have one almost every morning, so it’s important to keep ingredients and flavors fresh. If you don’t look forward to eating the healthy food you’ve planned to eat, you probably won’t enjoy it.
I remember the first time I made anything in a blender. We learned how to make “Orange Julius” in middle school Home Economics. Full of sugar and not healthy, but that beverage ignited my love affair with frothy, blended drinks.
So, I sought to create a sweet potato smoothie recipe that was simple, whole foods based, tasty and healthy. It turned out tasting like the delicious, delicious holidays.
Here’s what you need to put in your blender:
- 1 peeled steamed or microwaved sweet potato (soft)
- 1 cup frozen pineapple
- 1 cup almond milk
- 2 TBS blackstrap molasses
- 1 TBS cinnamon
