In the midst of the polar vortex, Fiance and I made the trek to the grocery store. It was a bad idea and we only had five minutes to put together a meal. We grabbed seven ingredients including pineapple, avocados, limes, cilantro, asparagus and beef tenderloin medallions.
The star of the show was really the simple asparagus on the side.
- 1 bunch of asparagus cleaned and trimmed
- 1 TBS of coconut oil softened in the mocrowave
- A dusting of sea salt on top
- Broil for 4 minutes on each side (or until to your crispiness preference)
